Turkey Panini With Chipotle Cranberry Spread Recipe
Nothing beats a leftover turkey sandwich, especially this chipotle-cranberry version! Chipotle and cranberry add savory depth to leftover roasted turkey, while Gouda cheese melts and goesoeys this panini.
1 chipotle in adobo sauce, finely chopped
2 tablespoons mayonnaise
¼ cup cranberry sauce
2 tablespoons butter, softened
6 slices sourdough bread
8 ounces carved turkey breast
8 slices Gouda cheese
1 cup arugula

In a small bowl, mix chipotle pepper, mayonnaise, and cranberry sauce. Save. Cover one side of each slice of bread with butter.

Spread chipotle cranberry spread on one slice and 2 Gouda on the other. Place a few turkey slices and arugula on the chipotle cranberry spread and close the sandwich.

Preheat griddle pan to medium. A heavy lid or grill press should weigh down the sandwiches on the hot griddle.

Flip and cook another 3 minutes until golden brown. Half sandwiches and add more cranberry mayonnaise.
