The Best Blondie Recipe

This blondie recipe makes cookies that are chewy, rich, and full of white chocolate chips. They are chewy like brownies, but they taste like vanilla instead of chocolate. This simple one-bowl recipe is great for baking during the week!

– ¾ cup unsalted butter melted and slightly cooled (170 grams) – 1 cup packed light brown sugar (200 grams) – ¾ cup granulated sugar (150 grams) – 2 large eggs at room temperature – 2 teaspoons pure vanilla extract – 2 cups all-purpose flour spooned & leveled (250 grams) – 1 teaspoon baking powder – ½ teaspoon salt – 1 cup white chocolate chips optional (190 grams)

Warm the oven up to 177°F (350°C). Line a 9x13-inch baking pan with aluminium foil or parchment paper, leaving some extra to make it easy to take off. Set the pan aside.

Mix in the flour, baking powder, and salt until it's just mixed in. Then add the white chocolate chips and fold them in gently. Fill the 9x13 pan with batter, and spread it out so that it's in a single layer.

Put it in the oven for 28 to 32 minutes, or until the top is set and getting a little brown. Take the pan out of the oven and set it on a wire rack to cool completely before cutting it into bars.
