Sweet And Savory Club Sandwich Recipe

Who looks forward to Thanksgiving leftovers more than the meal? When we were kids, our parents were masters at repurposing leftovers into new meals. 

– 4 slices bacon – 1 teaspoon honey – 2 teaspoons brown sugar – 1 cup cranberrie – 3 tablespoons sugar – 1 teaspoon lemon juice – 3 slices white bread – ½ cup spinach – 4 slices tomato on-the-vine – 2 slices Swiss cheese – 3 slices sliced turkey



Heat oven to 400 F. Wrap a baking sheet in foil. Put bacon on baking sheet. Drip honey on each bacon strip.

Add brown sugar to each bacon strip. Bake 15-20 minutes until crispy. Meanwhile, make cranberry sauce.

In a small saucepan, combine the cranberries, sugar, and lemon juice. Increase the heat to medium-low and simmer.

Cook for about ten minutes, or until jammy. If sugar is needed, add it to taste. Toast the bread.

Spread cranberry jam on one side of each slice of bread before assembling the sandwiches.

Top one slice of bread with tomato slices and spinach. Place a second piece of bread on top of the bacon.

Cover the second piece of bread with cranberry jam. Place the second piece of bread on top of the Swiss cheese, and then the turkey.

Place the last third of the bread on top. To serve, place toothpicks on each side and cut diagonally across both ways.
