Skinny Mocha Cheesecake Bars Recipe

Greek yogurt and less sugar lighten these Skinny Mocha Cheesecake Bars! Serve these bars for a simple dessert.

INGREDIENTS 

SERVINGS: 12 BARS CRUST: – 6 full-sheets chocolate graham cracker – 2.5 tablespoons melted butter CHEESECAKE: – 1 8-ounce package reduced fat cream cheese, softened – 1/3 cup granulated sugar – 1/4 cup semisweet chocolate chips melted and slightly cooled – 1 teaspoon instant coffee granule – 2 teaspoons hot water – 3/4 cup plain Greek yogurt – 2 tablespoons all-purpose flour – 1 teaspoon vanilla extract – 1 large egg room temperature

INSTRUCTIONS

Preheat oven to 350°F. Wrap an 8x8 baking pan in foil, leaving an overhang for easy removal.

Process chocolate graham crackers into fine crumbs in a food processor. Mix the crumbs and melted butter in a small bowl until combined.

Firmly press the mixture into the baking pan. Bake 8 minutes at 350°F. Let cool after removing from oven.

Lower oven to 325°F.Stand mixers with paddle attachments or handheld mixers should smooth cream cheese and sugar. Stir in melted chocolate.

Stir instant coffee and hot water in a small bowl to dissolve. Combine Greek yogurt, flour, and vanilla in a bowl. Slowly mix in the egg.

Apply cheesecake filling evenly to the crust. Bake at 325°F for 25 minutes.

Remove from oven and cool for 30 minutes. Put in the fridge for 3 hours or overnight. Cut and eat bars!
