– 1 ¼ cups warm water– 1 tablespoon sugar– 1 package active dry yeast– 1 ½ cups (180 g) all-purpose flour, plus ½ cup for kneading– 1 ½ cups (180 g) bread flour– 2 teaspoons kosher salt– ¼ cup extra virgin olive oil

In a small bowl, mix the yeast, sugar, and water together. Leave alone until foamy.

Use a dough whisk or wooden spoon to mix the flours, salt, and olive oil together in a big bowl.

Mix the yeast mixture into the flour mixture until everything is well mixed together.

Add more all-purpose flour to the top of the dough after moving it to a well-floured surface.

If you need to, add more flour and knead the dough well until it is only slightly sticky.

Let the dough rest in a warm, well-oiled basin for 90 minutes with a clean cloth.

After rising 90 minutes, cut the dough in half and bake at 500 F for 12–15 minutes with your toppings.
