Mushroom And Walnut Stromboli Recipe

Since pizza, Philadelphia-born stromboli is the best pizza dough dish. This tasty pizza or calzone alternative is filled with cured meats and cheeses and rolled into a log, but it can be vegetarianized.

2 cups strong white bread flour 2 teaspoons granulated sugar 1 ¼ teaspoons instant yeast 1 teaspoon salt ¾ cup lukewarm water 1 tablespoon olive oil 2 tablespoons olive oil ½ cup finely chopped onion 2 cups finely chopped mushrooms ½ cup finely chopped walnuts 2 garlic cloves, grated 1 teaspoon Italian mixed herbs Salt and black pepper, to taste 1 cup grated mozzarella 1 cup grated cheddar cheese

Mix flour, sugar, yeast, and salt in a bowl to make dough. Mix ½ cup water and olive oil until dough forms, adding additional water if needed.

Add flour or water as needed. Put dough in a clean, oiled bowl, cover with a clean kitchen towel, and let rise for an hour until doubled.

Meanwhile, make the filling. Olive oil and onion in a large frying pan over medium heat. Fry until soft, 6-7 minutes.

Sauté mushrooms for 5-6 minutes until they release all their water and are soft and golden. Season salt and pepper to taste after drying the pan.

Deflate stromboli dough with your fist after rising. Roll the dough into a 10x16-inch rectangle on a floured surface with a rolling pin.

Sprinkle the mushroom mixture over the cheese after straining off excess moisture to avoid soggy dough.

Top with cheddar cheese. Roll the dough into a 16-inch log slowly and tightly after folding both sides of the stromboli.

If needed, tuck the stromboli ends and sides to even it out. Make the topping: Mix olive oil, parsley, garlic powder, and salt in a small bowl.

Brush topping on stromboli. Sprinkle Parmesan. Cut three stromboli top slits with a sharp knife. Bake until golden all over, 25 minutes.
