Blue Bunny® Mint Chocolate Chip Ice cream and chocolate ganache on an easy brownie crust. This Mint Chocolate Chip Ice Cream Brownie Pie will become your spring dessert favorite!
INGREDIENTS
SERVINGS: 8 SLICESBROWNIE CRUST:– 1/2 cup unsalted butter, melted and slightly cooled– 1 cup granulated sugar– 2 large egg– 1 teaspoon vanilla extract– 1/2 cup all-purpose flour (spooned & leveled)– 1/2 cup unsweetened cocoa powder– 1/4 teaspoon saltICE CREAM:– 1 container Blue Bunny® Mint Chocolate Chip Ice CreamCHOCOLATE GANACHE:– 4 ounces semisweet chocolate– 1/2 cup heavy cream
INSTRUCTIONS
Preheat oven to 350°F. Parchment 9" springform. Spray the edges with nonstick cooking spray and set aside.

Mix melted butter and granulated sugar in a large bowl. Combine eggs and vanilla briefly. Mix flour, cocoa powder, and salt until combined. Smooth batter in springform pan.

Bake at 350°F for 20–25 minutes until the top is set and a wooden toothpick inserted into the middle comes out clean. Remove from oven and cool completely.

Soften Blue Bunny® Mint Chocolate Chip Ice Cream on the counter for 20 minutes. Put all the ice cream in a big bowl and mix until spreadable.

Apply ice cream evenly to cooled brownie crust.Cover and freeze for 3 hours to firm.

Chop chocolate and put in a big bowl. Set aside.Heat heavy cream in microwave-safe bowl 45 seconds. Pour heavy cream over chocolate and wait 2-3 minutes. Smooth ganache with whisk.

Remove ice cream pie from freezer and add ganache. Spread evenly with an angled spoon or spatula. Firm ganache by covering and freezing for 1-2 hours or overnight.

Remove the ice cream pie and topping from the freezer a few minutes before serving. Remove it from the pan by knife-loosening the edges. Slice and enjoy!
