Chicken Velveting
Cut the chicken against the grain and marinate it in cornflour and soy sauce. Keep aside.

Prepare Vegetables
Carrots, cabbage, and red bell peppers should be sliced.
Cut bok choy into white and green pieces. Keep aside.

Make Stir-Fry Sauce
Mix water, cornstarch, soy sauce, oyster sauce, sugar, and ground pepper in a bowl. Keep aside

Stir-Fry
Turn on the wok or deep fryer and add oil.
Add garlic to the oil just starting to smoke and stir-fry for a few seconds until it changes color.

Stir-fry velveted chicken until just cooked. Keep aside.
Stir-fry prawns until light pink and cooked. Set aside with chicken.

Stir-fry vegetables on high until dry and lightly browned.
Place cooked chicken, prawns, and noodles in the wok and mix well.

Add stir-fry sauce and fry another minute.
Season to taste and serve hot!
