House Special Chowmein Recipe

This House Special Chow Mein stir-fries noodles, vegetables, meats, and seafood in a flavorful sauce. This dish is popular in Chinese takeout and restaurants. Chef and restaurant choose the ‘house special’.

– Main Ingredients For Stir-Fry – 2 Tablespoon Oil – 1 Tablespoon Garlic – Chicken (Velveted – see below) – 1/2 Pound Raw Prawn – Mixed Vegetables  – Stir Fry Sauce  – 1 Pound Chow Mein Noodle

Chicken Velveting Cut the chicken against the grain and marinate it in cornflour and soy sauce. Keep aside.

Prepare Vegetables Carrots, cabbage, and red bell peppers should be sliced. Cut bok choy into white and green pieces. Keep aside.

Make Stir-Fry Sauce Mix water, cornstarch, soy sauce, oyster sauce, sugar, and ground pepper in a bowl. Keep aside

Stir-Fry Turn on the wok or deep fryer and add oil. Add garlic to the oil just starting to smoke and stir-fry for a few seconds until it changes color.

Stir-fry velveted chicken until just cooked. Keep aside. Stir-fry prawns until light pink and cooked. Set aside with chicken.

Stir-fry vegetables on high until dry and lightly browned. Place cooked chicken, prawns, and noodles in the wok and mix well.

Add stir-fry sauce and fry another minute. Season to taste and serve hot!
