Glazed Cranberry Bread Recipe

At the holidays, cranberries are added to all kinds of baked goods. With Jessica Morone's glazed cranberry bread recipe, you can add bread to that list.

– 2 cups all-purpose flour – 1 ½ teaspoons baking powder – ½ teaspoon baking soda – ¾ teaspoon salt – 1 cup white sugar – ½ cup vegetable oil – ½ cup orange juice – 1 tablespoon grated orange zest – 1 large egg – 1 cup cranberrie – ½ cup powdered sugar – 1 teaspoon orange liqueur (or orange juice) – 1 tablespoon cranberry juice

Start by preheating the oven to 350 degrees Fahrenheit. Spread nonstick cooking spray on a loaf pan measuring 9 inches by 5 inches.

Mix the flour, baking powder, baking soda, and salt together in a medium bowl using a whisk until everything is incorporated.

The white sugar, vegetable oil, orange juice, orange zest, and egg should be added to a large bowl and whisked together until the mixture is smooth.

To the bowl containing the wet ingredients, add the flour mixture and mix until it is almost completely incorporated.

Bake for fifty to fifty-five minutes in an oven that has been preheated, or until the top is golden brown and a toothpick inserted into the center remains clean.

After allowing the loaf to cool for fifteen minutes in the pan, move it to a wire rack to finish cooling completely before topping it with glaze.

In the meantime, in a small bowl, combine the powdered sugar, orange liqueur or orange juice, and cranberry juice by whisking them together until they are pureed.

When the cranberry bread has cooled, drizzle the glaze over it. Just cut and serve.
