Cheesy Gnocchi And Roasted Pepper Bake Recipe

Pasta is comforting and delicious, and a homemade meal centered around Italy's most versatile ingredient is bound to please.

1 red onion, sliced 2 red peppers, cut into large wedges ½ pound cherry tomatoes 3 cloves garlic, lightly crushed 6 stalks fresh thyme ½ teaspoon dried basil Salt and pepper, to taste 3 tablespoons olive oil 1 pound prepared gnocchi (shelf-stable or frozen) 4 ounces mozzarella, sliced 1 tablespoon fresh basil, to serve



Heat the oven to 375 F. Place sliced red onion, red peppers, cherry tomatoes, and garlic cloves on a large oven tray.

 Place the tray in the oven for 30 minutes to brown the tomatoes and soften the red peppers with blistered skin.

After cooling for 10 minutes, peel the red peppers with your fingers. Get rid of skins.
