Cheddar Cups with Avocado Feta Mousse Recipe


These cheddar cheese cups contain only cheddar! Fill them with avocado feta mousse and crispy kale for the perfect party appetizer.



Cheddar Cup – 1 block (6 oz.) Cheddar Cheese, shredded Avocado Feta Mousse: – 2 avocados, peeled and pitted – ½ cup crumbled feta cheese – 1 Tbsp freshly squeezed lime juice – 6 Tbsp milk – ¼ tsp black pepper Baked Kale – 2 cups kale leaves, cleaned with ribs removed – 1 ½ Tbsp olive oil – ¼ tsp red pepper flake – Pinch of salt


Preheat oven to 350-degrees and oil muffin tin.


Step 1

Shredded cheddar should be placed in small circular mounds on parchment or Silpat-lined baking sheets at least an inch apart.Bake cheese for 8-10 minutes at 350 degrees until golden.


Step 2

After 30-60 seconds, lift cheddar rounds with spatula and place in muffin tins. Form cheese cups. Wait 30-60 seconds before moving and work quickly to avoid gooey cheese.


Step 3

Cool completely before removing muffin tin. In each cup, top avocado feta mousse with crumbled baked kale.


Step 4

Make a mousse with avocado, feta, lime juice, milk, and black pepper.Mix kale, olive oil, red pepper flakes, and salt in a bowl.


Step 5

After coating kale, place leaves in a single layer on a baking sheet and bake at 350 for 16–20 minutes until crispy.Let cool after baking.
