Caramel Stuffed Snickerdoodles Recipe


Not the same old cinnamon sugar cookie. There is a tasty caramel center in the middle of these snickerdoodles.


SERVINGS: 18 COOKIES – 1 1/2 cups all-purpose flour (spooned & leveled) – 1 tsp cream of tartar – 1/2 tsp baking soda – 1/4 tsp salt – 1/2 cup unsalted butter, softened – 3/4 cup granulated sugar – 1 egg – 1 tsp vanilla extract – 9-10 soft caramels unwrapped and cut in half CINNAMON SUGAR COATING: – 2 tablespoons granulated sugar – 2 teaspoons cinnamon



Pre-heat oven to 350. Arrange a cookie sheet with parchment paper or silipat mat or cooking spray.


Step 1

Mix flour, cream of tartar, baking soda, and salt in a large bowl. In a separate bowl, cream butter and sugar. 


Step 2

After mixing the egg, add the vanilla. Add flour slowly until fully combined after everything is combined.


Step 3

Scoop dough into cookie sheet balls with a scoop. Put half a caramel in the center of each dough ball and wrap the dough around it. Roll more dough balls.


Step 4

Mix two tablespoons sugar and two teaspoons cinnamon in a small bowl. Cover dough balls in cinnamon sugar.


Step 5

On the cookie sheet, bake 10-12 minutes and cool 10 minutes.
