Blackberry Bars Recipes

Blackberry Bars have oat butter crumble and luscious, tart summer blackberries. It's a simple, tasty summer treat for any occasion.

– 280 g (2 cups) all-purpose flour – 100 g (1 cup) old-fashioned oat – 165 (3/4 cups) packed light brown sugar – 4 g (2 teaspoons) cinnamon – 2.8 g (1/2 teaspoon) salt – 0.7 g (1/4 teaspoon) nutmeg – 226 g (1 cup) cold butter, cubed

Fruit bars are my summer dessert favorites.  Seasonal fruit, mixed and matched for flavor, works best.  Blackberries are fantastic in fruit bars, pies, tarts, and cakes.

 Blackberries are sweet and tangy when ripe, making them excellent for nibbling, but I enjoy making them into a simple filling for summer bars.

Blackberries are mixed with lemon, sugar, and cornstarch and sandwiched between oat crumble layers. These perfectly baked cookies go great with homemade vanilla ice cream for a refreshing treat.  You may offer these bars for breakfast.

Oats are essential to crumb crust and topping.  When feasible, use old-fashioned oats, which are larger and have more texture than quick-cooking ones, which get too fine in the food processor.

You can better regulate salt in recipes with unsalted butter. To make a crumbly topping instead of cookie dough, use cold butter.

When possible, use seasonal blackberries for optimal flavor.  If out of season, freeze blackberries.  However, frozen berries have more water and require more thickener.

Cornstarch thickens blackberry filling. It's added directly to the mixture without premixing.  Wait until the filling bubbles before removing the pan from the oven.
